Pumpkin Curry

Hey Fitties 🙂 We’ve been a little creative and had a super delicious experiment: Pumpkin Curry- a typical thai food prepared autumnal style

Ingredients for 2 portions:

  • Massaman Curry paste
  • ginger,garlic, srping onions, thai basil
  • Pumpkin
  • sweet potato
  • meat/prawns
  • coconut milk
  • oyster sauce, tamarind paste
  • cashew nuts

Preparation:

For the pumpkin curry, we used Massaman Curry Paste. SautĂ© it in a pan with chopped ginger till you can smell it. Then add diced pumpkin and sweet potato as well as garlic and spring onions and meat/prawns of your choice. SautĂ© till soft and add coconut milk. Bring to a gentle simmer and cook for some minutes, then add Oyster Sauce, Tamarind Paste and some Cashew Nuts. After cooking add some Thai Basilikum and stir. That’s it, enjoy!
