Pink Curry – Vegetarian version

Hey Fitties 🙂

We had an evening with friends this weekend and wanted to serve a veggie curry – and by mistake we created this awesome Pink Curry 😀

Ingredients for 2 portions:

  • Green Curry paste
  • ginger,garlic, srping onions, thai basil
  • Broccoli
  • sweet potato (there’s a pink version of them)
  • coconut milk
  • oyster sauce, tamarind paste
  • cashew nuts


For the pink curry, we surprisingly used Green Curry Paste haha not a pink one ^^. SautĂ© it in a pan with chopped ginger till you can smell it. Then add sliced Broccoli and sweet potato as well as garlic and spring onions and spices of your choice. Saute till soft and add coconut milk. Bring to a gentle simmer and cook for some minutes, then add Oyster Sauce, Tamarind Paste and some Cashew Nuts. After cooking add some Thai Basil and stir. That’s it, enjoy!

So why it that crazy stuff pink now?!?!? just because of the colour of the sweet potatoes… there’s a Pink version of them – we just bought it by mistake at the Asia Shop – BUT WE LOVED IT haha
